I am just making it now, but even before I do so, I think it would be an improvement to the instructions (or a tip to those making it) to stress especially for less experienced cooks that a tablespoon of crushed red chile flakes, which is what many would think are being called for, would be way too hot for almost everybody. I used gochugaru, and the sauce pre-chicken tastes promising, but you could also use Espelette or Aleppo (etc.).
